Mother’s Day is fast approaching, this Sunday, May 9th. So why not give mom a gift that touches the heart. I have many fond memories of Mother’s Day celebrations but when my son baked me a vanilla cake with chocolate frosting, all vegan from scratch with a beautiful design in colored sprinkles, that really touched my heart ๐Ÿ’– He put so much love into that cake for me I’ll cherish that memory forever. Not to mention, the cake was so delicious we polished it off in only 2 days!!

Another touching memory was when my daughter spent a very rainy Mother’s Day with me watching our favorite movies with popcorn and candy. We had lunch in between and even played a few board games which is something I’ve loved doing since I was a kid. We had such fun together as we laughed all day. She created a wonderful loving memory that I will hold in my heart till the end of time ๐Ÿ’–

So what are you going to do for you mom on Mother’s Day that will touch her heart? Here’s a few ideas to get you inspired:

  • Cook her favorite meal and serve it on a lavishly decorated table.
  • Bake her favorite sweet treat and serve it up bistro style.
  • Take her on a picnic and spend a quiet afternoon talking.
  • Take an art class with her, whether online or in person and create something together.
  • Make a scrapbook filled with all of your favorite memories and photos of her.
  • Make her a handmade card or mini book with special photos or memorabilia.
  • If you’re computer savvy, create a video slide show of your favorites times spent together.
  • Make her a spa basket with handmade treatments (plenty of recipes can be found online).

Get creative, put a little extra thought into it and give her a gift from your heart ๐Ÿ’–

Easter Family Traditions

Growing up, Easter was a fairly big day of celebration. I remember how excited I was to color Easter eggs with mom the night before. Easter morning we started our day with breakfast and then off to church we went. For us kids, the highlight was getting back home to the Easter baskets filled with all kinds of goodies.

Mom would always get us something new to wear. Whether it was a new shirt or swimsuit, it was always exciting. Then it was time for the infamous Easter Egg Hunt in the garden which was a thrilling event! I held on to these wonderful family traditions with my kids and we all have a lot of fond memories and more in the making!

My kids are grown now but I still make them some type of basket. Iโ€™ve switched it up and gotten pretty creative over the years. This year I was going to try making these cute wafer decorations which can be found at SmartSchoolHouse.com. My Pinterest Easter Boardย is full of inspiring ideas on celebrating this Easter holiday.

Valentine’s Day is just around the corner. We all know that we should express our love every day to those we hold dear, but Valentine’s Day is that 1 day to really shine. Without spending a lot of money, here are 14 Ways to Show Your Love to that Special Someone in your life:

  1. Make a nice breakfast.
  2. Take over and do their chores for the day.
  3. Go for a nice walk together.
  4. Do a yoga or other exercise class together.
  5. Go out on a picnic.
  6. Watch a movie with candy and popcorn.
  7. Bake a special sweet dish like the vegan brownies from last Thoughtful Thursday!
  8. Make a handmade Valentine’s Day Card.
  9. Create a surprise “Love You” display on the kitchen table with candy, flowers.

Zucchini Brownie Recipe Review

Many moons ago when I tried eating vegan, it really wasn’t the tastiest, at least not the recipes I tried. I’ve been vegan now for the past several years and can say that the recipes have improved tremendously. Some recipes are so good you can’t even tell they’re vegan and not made with eggs, milk and the usual ingredients. A lot are even better all plant based.

You may have seen Zucchini Brownies for sale in health food stores and restaurants. The thought of making something as delicious as a brownie from a vegetable didn’t quite appeal to my taste buds at first. But being a chocolate lover I finally gave into my curiosity and tried one at a small restaurant. To my surprise it was so delicious and moist, I pretty much inhaled it, lol.

Since I love to bake, I figured someone on the internet must have a pretty good recipe. Lo and behold I came across ElaVegan.com hosted by Michaela. She is a very talented vegan food stylist, recipe creator, photographer and writer.

Michaela’s Zucchini Brownie Recipe was absolutely delicious as are her many other recipes which I highly recommend you try. The recipes are written with easy instructions, lots of photos and helpful tips. She also puts a tab at the top of each recipe for a quick print. Even if vegan isn’t your thing, it’s a delicious alternative to healthier meals. I highly recommend trying these delicious brownies!
