Hope your weekend is off to a great start! We’re in for some really cold weather here in South Florida, it’s dropping down in the 30’s. So it will be the perfect weekend to make some hot chocolate and get Hygge 😊

I wanted to try something new in my watercolor journal with my angel. So I played with new colors and created a slightly different design, I named her Angel Fay.

Abstract Art Paintings

I recently joined Jodi Ohl’s Abstract Interactive online course to further my knowledge of art. Painting abstracts takes me out of my comfort zone but Jodi is an excellent instructor and artist which makes it easier. This is a 10 week course with lots to learn so I’ll be posting a more paintings from the class.

I have to say I’ve been having a lot of fun playing with colors and learning to paint abstract art. The funny thing with abstract art is that everyone sees something completely different. These are my first three paintings I did on paper. What do you see?

Thoughtful Thursday Best-ever Beefless Stew

With the cooler temps finally here in the South, I wanted to try a new vegan soup recipe. But I wanted something really hearty that would be filling and I found it. This is a recipe for “Best-ever Beefless Stew” with portobello mushrooms taking the place of beef. If you’re not a fan of portobellos, I’m sure you could use another type of mushroom that would taste just as good.

I gotta say this was one of the most delicious and satisfying stews I’ve ever had! A few things I would change to the recipe is to add a little salt and pepper to taste and it also calls for fresh parsley as a topping. But I wasn’t too crazy with flavor of the parsley with the stew. I would recommend giving it a try anyways and see for yourself, you may end up liking it.

This recipe was published in the latest Forks Over Knives, “100 Best Plant-Based Recipes,” 2021 and it can also be found on their website “Best-ever Beefless Stew.” It was really easy to make with everyday ingredients.

Thoughtful Thursday When life throws you a curve ball

You may or may not have noticed I’ve been MIA for the last few weeks. I ended up getting pretty sick just before the holidays. So Christmas and New Year’s celebrations skipped my house this year. It felt strange but was necessary.

I’ve had people say to me, wow that’s a terrible way to end the year. But I don’t see it that way. Life threw me one heck of a curve ball. Instead of going crazy during the holidays trying to get everything done, I was forced to take it easy. It was the most chill holiday season I’ve ever had. And when someone says it was a terrible way to end the year, I say no it was great because I made it through it all and I’m still here ready to make this a better world, one day at time!

It’s taking a little more time than I expected to get my mojo back. My creative muse has also taken a hiatus. But I’m slowly getting myself rolling again with short workouts and super healthy eating habits. I’m grateful that I can continue to share my happiness with all of you 💖

Today I start a new course called Interactive Abstracts with Jodi Ohl. I’m really looking forward to this class and getting my creative muse back on track. With all of the rest I got I feel blessed to be more focused on what I want to accomplish this year. So you can expect great things from me in 2022!

When life throws you a curve ball, and believe me it will, don’t fight it. Go with the flow. Life is perfectly imperfect. Sometimes these curve balls give you a lot to think about. So find that silver lining in the cloud. Pick up the pieces and move forward with gratitude which is the best attitude!

Thoughtful Thursday Hygge

I’m sure you’ve seen the word hygge in more and more publications. Hygge is a Danish word, pronounced “HEW-guh.” It refers to coziness and peaceful and comfortable surroundings that invoke a sense of inner wellbeing and contentment.

Most of us may start the holiday season on a slow, joyful note and end up completely frazzled, letting out a sigh of relief that we survived. But it would be so much better if we would allow ourselves the time to just be in the moment. Don’t bite off more than you can chew this holiday season by obligating yourself for too many things. It’s ok to say no and take a little time for yourself.

Why not grab a blanket and cozy up on the sofa reading a nice book while sipping a cup of tea. Or relax in front of a nice, warm fire. Imagine how great it will feel to simply slow down and take in these wondrous moments. It will make your holiday season much more Merry!

A few years ago I came across a publication by Stampington, called the Cozy Issue. It’s an annual publication filled with stunning images and beautifully written words that magically drift off the pages. There are no advertisements in it all. It’s one of my favorite reads to get into that state of hygge. You can find the Cozy Issue on the Stampington.com website, I highly recommend it.

Thoughtful Thursday Happy Thanksgiving

Happy Thanksgiving!

It’s hard to believe that it’s that time of year again. The weather has gotten a little cooler, thank goodness and the leaves are changing. But this is a time of warm gatherings and welcoming family and friends into our homes with lots of love. It’s a time to reflect back on the year and give thanks for all that we have.

More importantly it’s a time for you. This is the time to slow down and take in the beauty around you. Catch your breath and nestle in for the winter with warm soups and hot cocoa. Take time for yourself this season to recharge your energy. Find happiness in the simple, small everyday moments. Allow your soul to linger in the joy and peace of the season.

I want to extend a sincere heartfelt “Thank You” to all of you for your love and support. It’s greatly appreciated!

Thoughtful Thursday – Spaghetti Squash

With autumn here, squash and pumpkins are in season! Spaghetti squash is one of my favorites this time of year. It’s a round/oval shaped yellow squash that can be light in color or a little more orange. It’s loaded with vitamins and minerals and is low in calories. It’s also a good source of Vitamin C, maganese and Vitamin B6.

1 Cup Cooked Spaghetti Squash contains about:

  • Calories: 42
  • Carbs: 10 grams
  • Fiber: 2.2 grams
  • Protein: 1 gram
  • Fat: 0.5 grams
  • Vitamin C: 9% of the Reference Daily Intake (RDI)
  • Manganese: 8% of the RDI
  • Vitamin B6: 8% of the RDI
  • Pantothenic acid: 6% of the RDI
  • Niacin: 6% of the RDI
  • Potassium: 5% of the RDI

Instead of eating traditional spaghetti that’s loaded with carbs and can be fattening, try making some spaghetti squash. It’s fairly easy to make and quite delicious. Although I must warn you, that cutting the spaghetti squash can be a little hard so be careful and use a sharp knife.

Recipe:

  • Cut the ends off the spaghetti squash and cut in half lengthwise.
  • Remove the seeds with a spoon.
  • Fill a shallow pan with about 1/4″ inch of water.
  • Place the spaghetti squash in the water, cut side down.
  • Bake in oven at 400 ̊F for 45 minutes or until the squash can be easily pierced with a fork. 
  • Once it’s cool enough to handle, gently scrape the inside flesh with a fork lengthwise to separate the spaghetti like strands but be careful not to break the outer shell.
  • Sprinkle with a little salt and pepper, if desired and serve with marinara sauce.

You can serve spaghetti squash in a variety of ways by adding different veggies, navy beans, chick peas or anything else that you like to eat. There are plenty of recipes online to get you started. So why not try something new and healthy too! You may be pleasantly surprised.

Watercolor Journal Golden Hair Angel

When I finished painting this angel the first thing that came to my mind was the song by America, Sister Golden Hair. With that being said, I named her Golden Hair Angel. It seemed to be a fitting name, lol. She is my latest angel in my Strathmore 5.5″ x 8.5″ watercolor journal. I didn’t think I would like her yellow hair that much, but it grew on me. What do you think?

While I loved doing the Color Lovers Challenge, I really missed painting my angels. Before we get too far away from summer and hues of blue, I thought I would post Ariana which I made in my Strathmore 5.5″ x 8.5″ watercolor journal. I love all the blues and violets in this one. What do you think?
